Antibacterial effect of wood:
As early as 1994, the Food Safety Laboratory of the University of Wisconsin found that wood kills bacteria. They described wood as one of the most hygienic materials of all. This is due to its natural ingredients (polyphenols) as well as the hygroscopic (moisture-attracting) property of the wood. This removes the moisture that bacteria need to survive. Bacteria that retreat into the interior of the wooden board can thus not multiply. They die off. This antibacterial effect remains even with repeated bacterial exposure. These findings are also confirmed by the Federal Agency for Agricultural and Food Safety (BBA) and the German Institute for Food Technology e.V. Source: Bavarian State Ministry for Food
