Antibacterial effect of wood: As early as 1994, the Food Safety Laboratory of the University of Wisconsin found that wood kills bacteria. They described wood as one of the most hygienic materials of all. The reason for this is its natural ingredients (polyphenols) as well as the hygroscopic (moisture-attracting) property of the wood. This removes the moisture that bacteria need to survive. Even bacteria that retreat into the interior of the wooden board cannot thus multiply. They die. This antibacterial effect remains even with repeated bacterial introduction. These findings are also confirmed by the Federal Agency for Agriculture and Forestry (BBA) and the German Institute for Food Technology e.V. Source: Bavarian State Ministry for Food, Agriculture and
