Antibacterial properties of wood: As early as 1994, the Food Safety Laboratory at the University of Wisconsin found that wood kills bacteria. They described wood as one of the most hygienic materials available. This is due to its natural compounds (polyphenols) as well as the hygroscopic (moisture-absorbing) properties of wood. This removes the moisture that bacteria need to survive. Bacteria that retreat into the interior of the wooden board are also unable to multiply. They die. This antibacterial effect remains even with repeated bacterial exposure. These findings are also confirmed by the Federal Research Centre for Agriculture and Forestry (BBA) and the German Institute for Food Technology e.V.
